Dining on the water

For four days, bubbles of four, six or eight people could take their places on a private raft. In a remarkable setting, Hoeilaart’s Vrije Tijd service brought local gastronomy, live music and conviviality together.

A local collaboration

Yves Cousin and Dill d’Ycov created the menus, while local associations supplied the drinks. Guitar, saxophone, cello, voice and double bass accompanied the different meals on the water.

Cold starters

  • Chawanmushi with smoked eel, seaweed, peas and purée
  • Bouillabaisse purée with quinoa, lentils and sage
  • Blue whiting, kaffir lime, lovage and beetroot

Hot main courses

  • Lamb with autumn barigoule, Guinea pepper and thyme potatoes
  • Young wild boar with figs and galangal
  • Glazed pheasant with chicory and kohlrabi

Desserts

  • Blond chocolate with basil and toasted almonds
  • Green-tea panna cotta with blackcurrant
